Easiest Way to Prepare Tasty Almondigas

Almondigas. It is our version of comfort food. Almondigas is a soup dish that has two main ingredients: meatballs and patola (this is also known as loofa of Chinese okra). I'm not sure where exactly this dish originated but it sure reminds me of a similar Spanish dish called Albondigas.

Almondigas It was bland and was missing a whole lot of veggies. I use corn fresh off the cob, squash, fresh green beans, and way more seasonings. Almondigas is an old Filipino soup recipe made from pork meatballs and misua. You can cook Almondigas using 16 ingredients and 7 steps. Here is how you cook it.

Ingredients of Almondigas

  1. You need of Meat ball.
  2. It's 1/2 of kilo ground pork.
  3. It's 1/2 cup of chopped carrots.
  4. You need 1/3 cup of chopped onions.
  5. Prepare 1/4 cup of all purpose flour.
  6. It's 2 of medium eggs.
  7. You need To taste of salt and pepper to taste.
  8. You need of Soup.
  9. You need 3 cups of chicken stock.
  10. It's 2 cups of water.
  11. You need 1 of small pack misua (wheat threads).
  12. It's 1/4 cup of chopped onions.
  13. You need 1/4 cup of garlic minced.
  14. Prepare 1/4 cup of chopped carrots.
  15. It's 1/4 cup of spring onions.
  16. Prepare To taste of pepper and salt.

I'm not sure where this recipe originates but the name of this recipe almondigas is similar to mexican meatballs called "albondigas". Since I first heard of this recipe I thought it has almonds in it but I'm mistaken. Almondigas or "bola-bola" soup is classic Filipino comfort food. It is a dish made of meatballs and misua with patola (sponge gourd) added most of the time.

Almondigas instructions

  1. Mix all ingredients of the meat ball and form small balls of a marble size.
  2. Sauté onions and garlic in two tablespoons cooking oil then add chopped carrots.
  3. Put chicken stock and put it in a boil.
  4. Add slowly the meat balls in the boiling soup add more water if needed.
  5. When the meat ball floats the meat is cooked..
  6. Add the misua noodles and wait for it to cook for 5 minutes.
  7. Put off the fire and add the chopped onion springs. Put salt and pepper to taste..

This soup reminds me of our childhood. Mama would cook this soup every now and then. Especially when we just had meatballs and there are some leftovers. Authentic albondigas are a quick and popular tapas dish that can also work well as a mid-week meal for all the family served with rice or pasta. My albondigas recipe is made from minced beef and pork blended with fried onions, cumin and smokey paprika and shaped into large Spanish meatballs that are slowly cooked in a rich tomato sauce made.
